Hearty Pork Pot Pies
- None None cooking oil spray
- 1 sheet frozen shortcrust pastry dough, thawed
- 2 None medium potatoes, peeled and chopped
- 1 tbsp vegetable or olive oil
- 1 None small onion, finely chopped
- 1/2 lb ground pork
- 3 None button mushrooms, thinly sliced
- 2 tsp flour
- 2 oz frozen peas
- 1 tbsp butter, chopped
- None None mixed green salad, to serve
- Preheat oven 400u0b0F. Spray 2 metal pie pans (5 inch each) with oil and line with the pastry dough. Chill for 15 mins.
- Meanwhile, cook potatoes in a medium saucepan of boiling water until tender. Drain and mash until smooth.
- For the pork mixture, heat the oil in a medium frying pan over medium heat and add the onion, pork and mushrooms. Cook, stirring with a wooden spoon and breaking up clumps, for 5 mins or until browned. Stir in flour and cook for 1 min. Add 1/3 cup water and the peas then cook and stir for 2 more mins or until the mixture thickens. Remove from the heat and cool slightly.
- Place pie pans on a baking sheet and bake for 5 mins. Remove from oven and fill with the pork mixture. Using a 1/2 inch star piping nozzle, pipe mashed potato over filling. Dot the top with butter and bake tor 20 mins or until golden. Serve with salad.
