Sausage And Mashed Potatoes With Cauliflower
- 2 1/4 lb potatoes, cut into pieces
- 1 cup milk + 2 tbsp
- 2 tbsp lemon juice
- 1 head cauliflower, stalk trimmed
- 2 None eggs
- 2 tbsp olive oil
- 4 None sausages
- 1/2 cup butter
- 3-4 tbsp breadcrumbs
- 1 pinch grated nutmeg
- 1/2 None lemon, zested
- 1/2 bunch fresh parsley, finely chopped
- Cook potatoes in boiling salted water for 20 mins. Meanwhile, bring a large pot of salted water to a boil with 1/3 cup milk and lemon juice. Submerge cauliflower and cook for 15-17 mins.
- To hard boil the eggs, place eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from the heat. Let eggs sit in hot water for 12 minutes, drain then run under cold water. Peel and chop.
- Meanwhile, heat oil in a frying pan and sear sausages for 10 mins, turning as necessary. Melt 6 tbsp butter in a pan and toast breadcrumbs until golden brown. Set aside.
- Drain potatoes and mash with remaining butter and milk. Season to taste with salt and nutmeg. Remove cauliflower with a slotted spoon, sprinkle with breadcrumbs, lemon zest, parsley and eggs and cut into 4 pieces. Serve sausages with mashed potatoes and cauliflower.
