Chocolate And Macadamia Cakes
- 1 1/2 cups powdered sugar, sifted
- 1 cup ground almonds
- 1/2 cup flour, sifted
- 1/4 cup unsweetened cocoa powder, sifted
- 6 None egg whites
- 12 tbsp (1 1/2 sticks) butter, melted
- 1/2 cup coarsely chopped macadamia nuts
- None None Powdered sugar for dusting
- Preheat the oven to 400u0b0F. Grease a 12-cup muffin pan.
- Combine powdered sugar, ground almonds, flour and cocoa in a large bowl.
- Whisk egg whites in a separate bowl until foamy. Fold into dry ingredients with melted butter, mixing until just combined. Spoon into prepared pan. Sprinkle with nuts.
- Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack. Dust top with powdered sugar.
