Honey Chocolate Truffles
- 3 oz marzipan, coarsely grated
- 10 tbsp butter
- 3 oz honey
- 1 None vanilla pod, scored lengthwise, seeds scraped out
- 7 oz dark chocolate, chopped
- 1 lb milk chocolate, chopped
- 3 oz blanched almonds, finely chopped
- Cream marzipan and butter until fluffy. Stir in honey and vanilla. Melt dark chocolate and 7 oz milk chocolate in a bowl set over pan of simmering water. Stir chocolate into marzipan mixture. Leave to cool in fridge for 30 minutes, stirring occasionally.
- Meanwhile, toast almonds in a dry pan until golden brown and leave to cool. Melt remaining chocolate in a bowl over simmering water. Use 2 teaspoons to carve out truffles from the chilled mixture.
- Dip each truffle in melted chocolate and place on a wire rack for 2 minutess to set. Sprinkle with chopped almonds.
