Teriyaki Tofu And Soba Noodle Salad
- 1/2 cup teriyaki sauce and marinade
- 12 oz firm tofu, thickly sliced
- 1 pkg (9 oz) dried soba noodles
- 2 tbsp vegetable or peanut oil
- 1 None red onion, halved, cut into thin wedges
- 1 tbsp grated fresh ginger
- 1 large red pepper, seeded and thinly sliced
- 7 oz snow peas, thinly sliced lengthwise
- 1/2 cup cilantro leaves, plus additional to serve
- Pour teriyaki sauce over tofu in a bowl; turn to coat. Let stand 10 mins to marinate. Cook noodles in a large saucepan of boiling water for 4 mins or until tender. Drain. Refresh under cold water. Drain well. Transfer to a large bowl.
- Heat a wok or large skillet on medium heat. Add 1 tbsp of the oil; swirl to coat surface. Remove tofu from marinade, reserving marinade. Cook tofu for 2 mins per side until golden. Add reserved marinade; stir-fry for 1 min or until browned.
- Transfer tofu mixture to a plate. Cover to keep warm. Wipe wok clean. Heat wok on high heat. Add remaining 1 tbsp oil; swirl to coat. Add onion and ginger; stir-fry for 3 mins or until softened. Remove from heat. Cool.
- Add tofu, onion mixture, pepper, snow peas and cilantro to noodles; toss to combine. Serve topped with additional cilantro leaves.
