Steamed Fish With Garlic And Ginger Greens
- 4 (6.5 oz) white fish fillets
- 2 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1 bunch asparagus, ends trimmed
- 1 bunch broccolini, ends trimmed
- 7 oz snow peas, trimmed
- 1 None large red chili, seeded, sliced
- 1 tbsp julienned ginger
- 1 clove garlic, finely chopped
- 1 tbsp oyster sauce
- 2 tbsp fresh Thai basil leaves
- None None toasted sesame seeds, to garnish
- Set up a bamboo steamer over simmering water. Combine fish with soy sauce and sesame oil. Place in steamer basket. Close lid and steam fish for 5 mins, or until cooked to your liking.
- While fish is steaming, heat vegetable oil in a wok over medium-high heat. Add green vegetables and stir-fry for 1 min. Add chili, ginger and garlic. Cook for 30 seconds. Stir in oyster sauce and 1 tbsp water. Stir-fry for 1-2 mins. Add basil leaves.
- To serve, distribute stir-fried greens between 4 serving plates. Top each with a place of fish and sprinkle with sesame seeds.
