Roast Pork With Spiced Apple Sauce
- 1 None boneless rolled pork loin (about 4 1/2 lbs), rind scored
- 1 1/2 tbsp olive oil
- 1 tbsp sea salt flakes
- None None FOR THE SPICED APPLE SAUCE
- 4 None Granny Gmith apples, peeled, cored and chopped
- 2 tbsp sugar
- 2` tbsp butter
- 2 tsp lemon juice
- 1 tsp mixed spice, such as pumpkin pie spice
- Preheat the oven to 425u0b0F. Weigh pork and calculate cooking time (allow 20 mins per pound for pork loin with rind).
- Place pork on a rack in a roasting pan. Drizzle with oil and rub salt onto pork.
- Roast for 20 mins. Reduce oven temperature to 350u0b0F. Roast a further 1 hour 10 mins, until cooked to desired doneness. Cover loosely with foil and let stand 15 mins.
- Meanwhile, for the apple sauce, combine all ingredients and 1/2 cup water in a medium saucepan. Bring to a boil on high heat. Reduce heat to low; simmer 10 mins, until fruit is pulpy. Stir with a wooden spoon until smooth.
- Slice pork and serve with apple sauce.
