Greek Penne Salad
- 9 oz penne pasta
- 9 oz feta cheese, cut into batons the same size as pasta
- 27 oz medium tomatoes, deseeded, thinly sliced
- 1 None cucumber, deseeded, thinly sliced
- 1 None small red onion, thinly sliced
- 4 oz pitted kalamata olives
- 4 oz pitted large green olives
- None None FOR THE DRESSING
- 1/3 cup olive oil
- 1/3 cup white wine vinegar
- 1 tsp granulated sugar
- 2 tbsp finely chopped fresh flat-leaf parsley leaves
- Cook pasta in boiling salted water until al dente. Rinse under cold water until cool then drain.
- Combine cooled pasta with remaining ingredients in a large bowl.
- Whisk together ingredients for salad dressing until emulsified. Season then pour over pasta salad and toss to combine.
