Orange Cupcakes With Cream Cheese Frosting
- 1/2 cup butter, at room temperature, chopped
- 3/4 cups granulated sugar
- 2 None large eggs
- 1 tbsp orange zest
- 2 1/4 cups self-rising flour, sifted
- 1/4 cup milk
- 1/4 cup orange juice
- -1 None Cream Cheese Frosting
- 3 oz cream cheese, softened
- 3 1/2 tbsp butter, softened
- 1/2 cup powdered sugar, sifted
- None None candied orange zest, to decorate
- Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- In a stand mixer, beat butter and sugar until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Beat in orange zest. Fold in flour, alternately with milk and orange juice, beginning and ending with flour. Distribute between paper liners and bake for 12-15 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, for the cream cheese frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and mix until combined. Spread over cooled cupcakes then decorate with candied orange zest.
