Prawn Toasts
- 24 None small raw prawns, peeled, deveined, tails left intact, butterflied
- 7 slices bread, crusts removed from 6 slices and quartered
- 3.5 oz royal red prawns
- 2 tsp soy sauce
- 1 None green onion, chopped finely
- 1 tsp fresh ginger, finely grated
- 2 None small fresh red chilies, deseeded, finely chopped
- 2 tbsp sesame seeds
- None None peanut oil, for deep-frying
- None None plum sauce, for serving (optional)
- In a food processor, pulse 1 slice of bread to breadcrumbs. Add royal red prawns and soy sauce. Process until smooth. Add onion, ginger and chilies.
- Spread 1 tsp prawn paste onto each piece of quartered bread and top each with a prawn. Sprinkle with sesame seeds.
- Heat oil and deep-fry prawn toasts, in batches, until lightly browned and cooked through. Drain on paper towels. Serve immediately, with plum sauce, if desired.
