Steak With Mango Salsa And Asparagus
- 2 lbs green asparagus, woody ends removed
- 1 1/2 tsp sugar
- 4 tbsp lemon juice
- 1 None small mango, peeled, stone removed and diced
- 3 None tomatoes, seeded and cubed
- 1 None spring onion, finely sliced
- 5 tbsp olive oil
- 2 tbsp tomato ketchup
- 4 None small sirloin steaks
- Bring a large pot of salted water to a boil with 1 tsp of sugar and 1 tbsp of lemon juice. Add the asparagus and blanch for about 3 mins, then remove and rinse with cold water.
- For the salsa, mix the mango, diced tomato and spring onion. Stir in 3 tbsp of lemon juice, 2 tbsp of oil, 1/2 tsp of sugar and the ketchup. Season to taste.
- Heat 2 tbsp of oil in a frying pan. Cook the steaks for 3 mins on each side, season to taste and remove from the pan. Wrap in foil and leave to rest for about 3 mins.
- Add 1 more tbsp of oil to the frying pan and saute the asparagus for about 3 mins. Season to taste and arrange on 4 plates with the steaks and salsa.
