Fluffy Baked Eggs

  1. Preheat the oven to 350u0b0F. Lightly grease 4 gratin dishes or 1 shallow gratin dish. Place on a baking pan.
  2. Melt butter in a large skillet on medium heat. Saute ham, pepper and spinach for 1-2 mins until spinach wilts. Spoon evenly into ramekins.
  3. Whisk egg yolks, cream, 1/2 cup of the cheese and Dijon mustard in a large bowl. Season to taste.
  4. In a separate clean bowl, whisk egg whites until soft peaks form. Fold into egg yolk mixture. Pour evenly into dishes. Sprinkle with remaining 1/4 cup cheese.
  5. Bake for 10-12 mins until risen and golden. Serve with crusty bread.
