Fluffy Baked Eggs
- 2 tbsp butter
- 4 oz ham, cut into strips
- 3/4 cup roasted red pepper, sliced
- 2 cups baby spinach leaves
- 6 None eggs, separated
- 1/2 cup heavy cream
- 3/4 cup grated Gruyere cheese
- 1 tsp Dijon mustard
- None None Crusty bread, to serve
- Preheat the oven to 350u0b0F. Lightly grease 4 gratin dishes or 1 shallow gratin dish. Place on a baking pan.
- Melt butter in a large skillet on medium heat. Saute ham, pepper and spinach for 1-2 mins until spinach wilts. Spoon evenly into ramekins.
- Whisk egg yolks, cream, 1/2 cup of the cheese and Dijon mustard in a large bowl. Season to taste.
- In a separate clean bowl, whisk egg whites until soft peaks form. Fold into egg yolk mixture. Pour evenly into dishes. Sprinkle with remaining 1/4 cup cheese.
- Bake for 10-12 mins until risen and golden. Serve with crusty bread.
