Chicken Skewers With Chili Garlic Mayonnaise
- 1 lb boneless skinless chicken thighs, cut into 1-inch cubes
- 1 tsp finely grated lime peel
- 1/4 cup lime juice
- 1 tbsp olive oil
- None None FOR THE CHILI GARLIC MAYONNAISE
- 1 None egg yolk
- 2 cloves garlic, crushed
- 2 tbsp lime juice
- 2 tbsp sweet chili sauce
- 1 cup peanut oil
- 1 tbsp coarsely chopped fresh cilantro
- Thread chicken cubes onto eight skewers. Combine lime peel and juice and oil in a shallow dish. Add skewers and turn to coat well. Cover and let stand 10 mins.
- Meanwhile, for the chili garlic mayonnaise, blend or process egg yolk, garlic, lime juice and chili sauce until smooth. With motor operating, gradually add the oil in a thin stream. Blend until thick. Stir in cilantro.
- Cook skewers on heated oiled grill pan (or under broiler or on the grill) until browned all over and cooked through, brushing skewers with marinade while cooking.
- Serve skewers with mayonnaise.
