Chicken Skewers With Chili Garlic Mayonnaise

  1. Thread chicken cubes onto eight skewers. Combine lime peel and juice and oil in a shallow dish. Add skewers and turn to coat well. Cover and let stand 10 mins.
  2. Meanwhile, for the chili garlic mayonnaise, blend or process egg yolk, garlic, lime juice and chili sauce until smooth. With motor operating, gradually add the oil in a thin stream. Blend until thick. Stir in cilantro.
  3. Cook skewers on heated oiled grill pan (or under broiler or on the grill) until browned all over and cooked through, brushing skewers with marinade while cooking.
  4. Serve skewers with mayonnaise.
