Butter Brioche
- 1 cup 2% milk + 2 tbsp
- 3 3/4 tbsp active dry yeast
- 5 tbsp sugar + 1 tsp
- 1 cup butter, softened
- 5 1/3 cups all-purpose flour
- 1 None egg
- 1 tsp vanilla extract
- Heat milk until lukewarm, add yeast and stir until dissolved. Add 1 tsp sugar and set aside in a warm place for about 10 mins. Mix butter, a pinch of salt, flour, egg, vanilla extract and remaining sugar. Add yeast mixture and knead until smooth. Cover and leave in a warm place for about 45 mins to proof.
- When dough has doubled in size, turn out onto a floured surface and knead again for 2-3 mins. Cut into 4 portions and roll into balls. Place, side by side, in a greased and floured 11 inch loaf pan. Cover and let proof for about 1 hour.
- Preheat oven to 350u0b0F. Bake brioche for about 30 mins then let cool in pan on a wire rack, covered with a tea towel, for about 30 mins then remove from pan and let cool completely.
