Millionaire Shortbread Bars

  1. Preheat oven to 350u0b0F. Lightly grease an 8 x 12 inch brownie pan. Line base and sides with parchment paper.
  2. In a bowl, combine flour, sugar and coconut. Make a well in the center and add melted butter, blending well until combined.
  3. Press mixture firmly into prepared pan. Bake for 15-20 mins until lightly browned. Cool.
  4. Combine remaining 1/4 cup of butter, condensed milk and syrup in a medium saucepan. Stir over low heat until smooth. Pour over the base. Bake for 15-20 mins until golden. Cool.
  5. Place chocolate and oil in a double boiler and heat for 4-5 mins until melted and smooth. Spread evenly over caramel.
  6. Chill until set. Cut into squares. Store in an airtight container.
