Millionaire Shortbread Bars
- 1 cup all purpose flour, sifted
- 1/3 cup brown sugar
- 1/2 cup shredded coconut
- 3/4 cup butter, 1/2 cup melted
- 1 (14 oz) can sweetened condensed milk
- 2 tbsp maple syrup
- 7 oz dark chocolate, chopped
- 2 tsp vegetable oil
- Preheat oven to 350u0b0F. Lightly grease an 8 x 12 inch brownie pan. Line base and sides with parchment paper.
- In a bowl, combine flour, sugar and coconut. Make a well in the center and add melted butter, blending well until combined.
- Press mixture firmly into prepared pan. Bake for 15-20 mins until lightly browned. Cool.
- Combine remaining 1/4 cup of butter, condensed milk and syrup in a medium saucepan. Stir over low heat until smooth. Pour over the base. Bake for 15-20 mins until golden. Cool.
- Place chocolate and oil in a double boiler and heat for 4-5 mins until melted and smooth. Spread evenly over caramel.
- Chill until set. Cut into squares. Store in an airtight container.
