Spicy Beef Chili
- 1 tbsp oil
- 1 None onion, chopped
- 2 cloves garlic, chopped
- 2 tsp ground cumin
- 2 tsp paprika
- 2 None small red chili peppers, deseeded and chopped
- 2 lbs sirloin steak, trimmed and diced
- 2 cups beef stock
- 14 oz can chopped tomatoes
- 2 tbsp tomato puree
- 14 oz can red kidney beans, drained and rinsed
- 1 None red pepper, deseeded, diced
- None None sliced avocado, sour cream and warm tortillas, to serve
- Heat oil in a medium saucepan on high. Saute onion and garlic 5 mins, until tender. Add cumin, paprika and chili pepper. Cook, stirring, 1 min. Add steak, stock, tomatoes and tomato puree. Bring to a boil. Reduce heat and simmer 40-45 mins, until meat is tender. Stir in kidney beans and pepper. Cook, stirring, 10 mins, or until pepper is tender. Serve with sliced avocado, sour cream and warm tortillas.
