Tuna And Salmon And Cream Cheese Sandwiches
- 1/2 lb can tuna, drained
- 1/2 None onion, finely diced
- 4 tbsp mayonnaise
- 1 tsp lemon juice
- 12 None white bread slices
- 12 None whole wheat bread slices
- 2 None tomatoes, sliced
- 1/2 None cucumber, sliced
- 1 None red pepper, deseeded and diced
- 3 tbsp parsley leaves
- 1 None radicchio lettuce, chopped
- 1/2 lb cream cheese
- 1 lb smoked salmon
- Beat the tuna, onion, mayonnaise and lemon juice together and season. Spread the mixture over 3 white and 3 whole wheat pieces of bread, add tomato, cucumber, red pepper, parsley and radicchio.
- Spread the cream cheese on 6 remaining pieces of bread and divide the smoked salmon between them. Place the two sandwich halves together. Remove the crusts of the sandwiches, if desired, and slice before serving.
