Bulgur Wheat And Bean Salad
- 1 1/4 cup vegetable stock
- 1 tsp olive oil + 4 tbsp
- 1/3 lb bulgur wheat, rinsed in cold water then drained
- 1 None lemon, zested and juiced
- 1/2 lb frozen peas
- 1/2 lb frozen fava beans
- 3 sprigs fresh flat-leaf parsley, chopped
- 3 sprigs fresh mint, chopped
- 4 sprigs fresh cilantro, chopped
- 2 None spring onions, chopped into rings
- Bring the stock and 1 tsp oil to a boil. Add the bulgur wheat, remove the saucepan from the heat and leave the bulgur wheat to swell for 5-8 mins. Transfer to a bowl and break up any lumps with a fork. Add the lemon zest and juice and season to taste. Set aside to cool.
- Meanwhile, cook the peas in boiling salted water for 3-4 mins, drain and rinse immediately under cold water. Blanch the fava beans in boiling salted water for 1 min, drain and rinse under cold running water. If favas still have peels, remove.
- Mix the bulgur wheat, peas, favas, parsley, mint, cilantro and spring onions with 4 tbsp of oil and season to taste.
