Tuna, Bean And Radish Couscous

  1. Bring stock to a boil in a medium saucepan on high heat. Remove from the heat. Stir in couscous. Cover. Let stand for 5 mins or until liquid is absorbed. Using a fork, fluff and separate grains.
  2. Spoon couscous into a large bowl. Add beans, radish, parsley, tuna and lemon peel; stir to combine. Whisk lemon juice and oil in a small bowl. Season. Pour over couscous mixture; stir to combine. Serve.
