Apricot Chicken With Couscous

  1. Lightly coat drumsticks in flour, shaking off excess. Heat 1 tbsp oil in a large frying pan. Working in batches, brown chicken for 2-3 mins per side, or until golden. Set aside and cover.
  2. Add remaining oil and saute onion and garlic over high heat for 3-4 mins, until tender. Add Moroccan seasoning and cook, stirring, for 1 min. Add apricot juice and stock. Bring to a boil then return chicken to pan. Simmer, covered, for 20 mins. Remove lid and cook for another 20-25 mins, until chicken is cooked through.
  3. Serve chicken on a bed of couscous. Garnish with fresh cilantro.
