Apricot Chicken With Couscous
- 8 None chicken drumsticks
- 1/2 cup all-purpose flour, seasoned
- 2 tbsp olive oil
- 1 None onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp Moroccan seasoning
- 1 (13.5 oz) can apricot juice
- 1 cup chicken stock
- None None couscous, to serve
- None None fresh cilantro, chopped, to garnish
- Lightly coat drumsticks in flour, shaking off excess. Heat 1 tbsp oil in a large frying pan. Working in batches, brown chicken for 2-3 mins per side, or until golden. Set aside and cover.
- Add remaining oil and saute onion and garlic over high heat for 3-4 mins, until tender. Add Moroccan seasoning and cook, stirring, for 1 min. Add apricot juice and stock. Bring to a boil then return chicken to pan. Simmer, covered, for 20 mins. Remove lid and cook for another 20-25 mins, until chicken is cooked through.
- Serve chicken on a bed of couscous. Garnish with fresh cilantro.
