Lamb Meatballs With Couscous
- 1 1/2 lb ground lamb
- 1/3 cup breadcrumbs
- 1 None egg, lightly beaten
- 1 clove garlic, minced
- 2 tsp ground cumin
- 3.5 oz feta cheese, cut into 20 pieces
- 2 tbsp vegetable or olive oil
- 7 oz couscous
- 2 None medium tomatoes, finely chopped
- 1 None small red onion, finely chopped
- 3 tbsp fresh mint, roughly chopped
- 8 None pitas, split open
- Combine ground lamb, breadcrumbs, egg, garlic and cumin. Shape into 20 meatballs. Press a piece of feta into each ball then re-roll to enclose. Chill for 1 hour 30 mins.
- Heat 1 tbsp oil in a large frying pan, cook meatballs, in batches, for 3-4 mins, or until browned and cooked. Set aside.
- Meanwhile, combine couscous with remaining oil. Cook according to package instructions. Fluff and separate grains with a fork. Combine with meatballs, tomatoes, onion, and mint. Season then stuff pitas. Serve.
