Lamb Meatballs With Couscous

  1. Combine ground lamb, breadcrumbs, egg, garlic and cumin. Shape into 20 meatballs. Press a piece of feta into each ball then re-roll to enclose. Chill for 1 hour 30 mins.
  2. Heat 1 tbsp oil in a large frying pan, cook meatballs, in batches, for 3-4 mins, or until browned and cooked. Set aside.
  3. Meanwhile, combine couscous with remaining oil. Cook according to package instructions. Fluff and separate grains with a fork. Combine with meatballs, tomatoes, onion, and mint. Season then stuff pitas. Serve.
