Orange And Lime Jelly
- 2 1/4 lbs oranges, coarsely chopped
- 9 oz limes, coarsely chopped
- 2 lbs sugar (about 4 1/2 cups)
- 1 1/2 tbsp powdered pectin
- Combine oranges, limes and 2 quarts water in a large saucepan on high heat. Bring to a boil. Reduce heat to low; simmer, covered, for 1 hour, or until fruit is soft.
- Strain mixture through a fine cloth into a large bowl. Let stand for at least 3 hours or overnight until liquid stops dripping. Do not squeeze cloth; discard pulp.
- Measure fruit liquid. Add 1 cup sugar for each 1 cup fruit liquid. Return fruit liquid and sugar to pan. Stir on high heat, without boiling, until sugar has dissolved. Bring to a boil; boil rapidly, uncovered, without stirring, for 15 mins, or until thickened. Sprinkle in pectin; boil, uncovered, for 5 mins, or until jelly is set when tested. (To test for a jelly's setting point, place a small quantity of the mixture onto a saucer. Allow to cool. If its ready, it will gel and wrinkle when moved.)
- Pour hot jelly into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place. Once opened, store in the refrigerator.
