Green Tea And Honey Cupcakes
- 1/2 cup butter, softened
- 1/3 cup granulated sugar
- 1/4 cup honey
- 1 None egg
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 3 tsp green tea powder
- 1 cup powdered sugar, sifted
- None None chopped pistachios, to decorate
- None None freshly brewed green tea, to serve
- Preheat oven to 325u0b0F. Lightly coat two 12-cup muffin pans with oil.
- Cream butter and sugar until pale. Add honey and egg, beating until combined. Sift in flour, baking powder, green tea powder and a pinch of salt. Mix until just combined. Distribute between muffin pans and bake for 20 mins, or until a skewer inserted in the center comes out clean. Let cool in pans for 5 mins then transfer to a wire rack to cool completely.
- Combine powdered sugar with enough water to make a runny icing. Drizzle over cooled cupcakes and sprinkle with pistachios. Serve with a pot of freshly brewed green tea.
