Cinnamon Buns

  1. Combine flour, whole egg, vanilla extract, 3 1/2 tbsp butter and a pinch of salt. Combine warmed milk, 2 tbsp sugar and yeast. Add to dry ingredients and knead with the dough hook of a mixer until smooth. Cover and let rest in a warm place for 45 mins.
  2. Preheat oven to 400u0b0F. Line 3 baking sheets with parchment paper. Combine cinnamon, almonds and remaining sugar. Set aside. In a saucepan, melt 5 1/2 tbsp butter over low heat. Let cool slightly.
  3. On a lightly floured work surface, knead dough then roll out into a 22x16 inch rectangle. Brush with melted butter and sprinkle with cinnamon mixture. Roll up tightly from one long side and cut into 27 slices. Place on prepared baking sheets. Whisk egg yolk with 2 tbsp water and brush over buns. Let rest in a warm place for 20 mins. Bake for 10-12 mins, until golden brown. Transfer to a wire rack to cool.
  4. In a bowl, mix powdered sugar and 4-5 tbsp water until thick. Transfer to a piping bag and drizzle over buns. Let dry.
