Chargrilled Vegetables And Tuna

  1. Preheat a grill plate or grill over medium heat. Lightly coat vegetables with oil. Cook in batches for 5-10 mins, turning, until tender and cooked through. Slice mushrooms then transfer to a large bowl.
  2. Cook tuna for 2-3 mins per side, until cooked to your liking. Let rest for 5 mins then slice. Add to bowl with vegetables.
  3. Whisk together olive oil, vinegar and mustard. Add to bowl with vegetables and tuna along with basil. Toss to combine. Sprinkle with pine nuts. Serve with couscous, if desired.
