Turkey Cassoulet
- 1/2 to 2 lb. cooked turkey, cut into 2-inch cubes
- 1 medium onion, chopped
- 2 Tbsp. butter
- 1 c. turkey or chicken broth
- 1 bay leaf
- 1/2 tsp. salt
- 1/2 tsp. thyme
- 2 (1 lb.) cans white beans, without sauce
- 1/4 c. tomato paste
- 1/2 to 3/4 lb. smoked sausage, cut into 1-inch pieces
- In a large saute pan, cook onion in butter until soft and translucent.
- Add broth, bay leaf, salt and thyme.
- Drain and discard liquid from beans and add beans to pan.
- Stir in tomato paste and mix well.
- Add turkey cubes and smoked sausage pieces. Turn into a 2 1/4 to 2 1/2 quart stove-to-table casserole dish. Cover and bake in 350u0b0 preheated oven for 20 minutes.
- Uncover and bake for an additional 10 to 15 minutes until hot and bubbly. Serve with a crusty French bread and an assortment of cheese and fresh fruit.
- Makes 6 servings.
