Stained-Glass Ginger Biscuits
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1 None large egg yolk
- 2 1/4 cups all-purpose flour
- 3 tsp ground ginger
- 1 tsp baking soda
- 1/3 cup golden syrup, warmed
- 5 oz hard candies
- None None ribbon, for threading
- Preheat oven to 350u0b0F. Lightly grease and line 2 baking trays with parchment paper.
- Beat butter and sugar together until pale and creamy. Beat in egg yolk. Sift flour, ginger and baking soda together into a bowl. Alternately stir syrup and dry ingredients into creamed mixture. Knead gently on a lightly floured surface then roll out to 1/4 inch thick. Cut out cookies using a 2 inch round cookie cutter. Place on trays. Chill for 5 mins.
- Using 1 inch Christmas-shaped cutters, cut out Christmas shapes from the center of each cookie.
- Group hard candies into colors then crush each color separately in a food processor. Spoon into the center of cookies so candy is level with dough. Bake for 5 mins.
- Use a skewer to make a small hole 1/2 inch from the top of each cookie. Add more crushed candy to center holes and bake for 5 mins, until cookies are light golden brown. Let cool completely on trays. Thread a ribbon through holes to hang on the tree.
