Quesadillas With Onion Salsa
- 2 tbsp lemon juice, + extra for sprinkling
- 1 tsp sugar
- 4 tbsp olive oil
- 1 None green chilli, deseeded and finely chopped
- 2 None large red onions, peeled and finely diced
- 8 sprigs fresh oregano, little set aside for garnish, remainder chopped
- 2 None avocados, peeled, stoned and thinly sliced
- 200 ml soured cream
- 1/4 tsp cayenne pepper
- 8 None flour tortillas
- 200 g Cheddar, grated
- None None Oil, for brushing
- In a bowl, mix the lemon juice, sugar and olive oil. Season with salt and stir in the chili, onion and oregano.
- Sprinkle the avocados with lemon juice. In a bowl, mix the sour cream and cayenne pepper. Spread the sour cream mixture over 4 tortillas, top with the avocado slices and sprinkle with the cheese. Top with the remaining tortillas and press down. Brush both sides with oil.
- Heat a frying pan and warm the quesadillas for 2 mins on each side. Remove from the pan and cut into wedges. Garnish with oregano and serve with the salsa.
