Quesadillas With Onion Salsa

  1. In a bowl, mix the lemon juice, sugar and olive oil. Season with salt and stir in the chili, onion and oregano.
  2. Sprinkle the avocados with lemon juice. In a bowl, mix the sour cream and cayenne pepper. Spread the sour cream mixture over 4 tortillas, top with the avocado slices and sprinkle with the cheese. Top with the remaining tortillas and press down. Brush both sides with oil.
  3. Heat a frying pan and warm the quesadillas for 2 mins on each side. Remove from the pan and cut into wedges. Garnish with oregano and serve with the salsa.
