Tandoori Chicken Pizza
- 14 oz chicken breasts, butterflied
- 2 tbsp tandoori curry paste
- 1 tbsp lemon juice
- 1/2 cup natural yogurt
- 2 tbsp vegetable oil
- 4 pieces naan bread
- 2 tbsp mango chutney
- 1 None small red pepper, deseeded, finely chopped
- 2 tbsp raisins, coarsely chopped
- 2 tbsp sliced almonds
- 3/4 cup cheddar cheese, shredded
- 2 tbsp cilantro leaves
- Preheat oven to 425u0b0F. Grease 2 baking trays.
- Combine chicken, tandoori paste, lemon juice and half the yogurt in a medium bowl. Cover with plastic wrap and chill for 1 hour to marinate.
- Heat oil in a large pan over moderate heat. Cook chicken for 2-3 mins each side, or until cooked through. Remove from pan. Cool slightly and slice thickly.
- Place naan bread on prepared trays. Spread with chutney and top with chicken, peppers, raisins, almonds and cheese. Bake for 10-12 mins, or until bases are crisp. Sprinkle with cilantro.
- Serve pizza topped with remaining yogurt.
