Savory Bread And Butter Bake
- 1/2 cup mild salsa
- 2 None baguettes, cut into 1/2 inch-thick slices
- 1 cup mixed antipasto vegetables, chopped
- 1 cup crumbled feta cheese
- 2 oz thin slices mild salami
- 8 None eggs
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- None None Roasted cherry tomatoes, to serve
- Preheat the oven to 350u0b0F. Lightly grease an 8-inch square baking dish.
- Spread salsa on one side of each slice of bread. Arrange half the bread, salsa side up, in prepared dish to cover bottom. Layer with antipasto vegetables, feta and salami.
- Whisk eggs and milk in a medium bowl. Season to taste. Pour 1/2 the egg mixture over bread, pressing down gently.
- Top with remaining bread slices, salsa side down. Pour remaining egg mixture over top, pressing down to ensure all bread is well soaked in the mixture. Sprinkle with Parmesan cheese.
- Place baking dish in a deep roasting pan. Add hot water to roasting pan to come halfway up sides of baking dish.
- Bake 35-40 mins, until just set. Remove from roasting pan. Cool 5 mins. Serve with roasted cherry tomatoes.
