Salami Bolognese
- 10.5 oz lean ground beef
- 8 slices pepperoni, finely sliced
- 1 None zucchini, roughly grated
- 1 None carrot, roughly grated
- 2 cups tomato pasta sauce
- 1 tbsp chopped fresh flat-leaf parsley leaves
- 10.5 oz dried shell pasta or short pasta of choice
- None None green salad, to serve (optional)
- Heat a large nonstick frying pan over medium heat. Cook ground beef and salami for 10 mins, until cooked through and browned.
- Add zucchini, carrot, pasta sauce and 1/2 cup water. Cook, stirring occasionally, for 10 mins, until liquid has reduced. Remove from heat and stir in 1/2 tbsp parsley.
- Meanwhile, cook pasta in boiling salted water for 10-15 mins, until al dente. Drain. Add pasta to sauce and toss to combine. Transfer to serving bowls and sprinkle with remaining parsley. Serve with green salad, if desired.
