Beef Patties With Onions, Potatoes And Green Beans
- 800 g green beans, trimmed
- 1 kg potatoes, peeled and chopped
- 1 None stale bread roll, soaked in cold water
- 4 None onions, 1 finely diced and 3 sliced in rings
- 600 g minced meat
- 1 None egg
- 3-4 tbsp ketchup
- 2-3 tbsp olive oil
- 1 tsp English mustard
- 10 g clarified butter
- 250 ml semi skimmed milk
- 25 g butter
- 1 tsp grated nutmeg
- 1 tsp herb butter
- 3 sprigs parsley, finely chopped
- Mix together ground beef, egg, bread, ketchup, mustard and diced onion. Season, and form into 8 patties. Cook potatoes in boiling salted water for 25 mins. Meanwhile, heat oil in a pan and fry patties two at a time for 5-6 mins each side. Cook beans in boiling salted water for 10 mins.
- Heat clarified butter in a small pan and fry sliced onions until golden. Remove from heat and put some aside for garnish. Heat milk and butter. Drain potatoes and mash while gradually add the heated milk and butter. Season with nutmeg.
- Drain beans and toss in herb butter. Arrange patties, beans, mashed potatoes and onion rings on serving plates. Garnish with fried onions and chopped parsley. Serve with ketchup.
