Turkish Koftas With Mint Yogurt
- 1 1/2 lbs ground lamb or beef
- 1 oz lightly toasted pine nuts, coarsely chopped
- 1 oz raisins
- 2 tbsp fresh breadcrumbs
- 1 None egg, beaten
- 2 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 3/4 cup basmati rice
- 1 oz dried apricots, chopped
- 1 cup Greek yogurt
- 6 stems mint, leaves picked and finely chopped, plus extra leaves to garnish
- In a large bowl, mix the ground meat, pine nuts, raisins, breadcrumbs and egg. Season with salt and pepper. Using wet hands shape into 8 koftas (meatballs).
- Heat half the oil in a saucepan, add the cumin and chili and cook for 1 min until fragrant. Add the rice, stirring, to coat in the oil and spices. Add enough boiling water to cover the rice by approx 1/2 an inch, cover, and cook for the time stated on the packet or until the water has been absorbed and the rice is cooked (add a little more water if necessary). Add the apricots.
- Meanwhile, heat the remaining oil in a skillet and cook the koftas, turning, for 7-9 mins, or until cooked through.
- Mix together the yogurt and the chopped mint; season. Serve with the koftas and rice. Season with freshly ground black pepper and garnish with the extra mint leaves.
