Honey Hazelnut Semifreddo With Warm Figs
- 4 None eggs, separated
- 1/4 cup sugar
- 1/4 cup honey, warmed, plus additional 1 tbsp
- 2 1/2 cups heavy cream
- 1/3 cup finely chopped roasted hazelnuts
- 4 None fresh figs, halved
- Line a 4-cup loaf pan with plastic wrap.
- Beat egg yolks and sugar in a medium bowl with an electric mixer for 3-4 mins, until thick and pale. Stir in honey.
- Beat cream in a large bowl until soft peaks form. Gently fold in yolk mixture.
- Beat egg whites in a clean bowl until stiff peaks form. Gently fold into cream mixture in 2 batches. Lightly mix in hazelnuts. Pour into prepared pan. Freeze for 3 hours or overnight.
- Heat a large skillet on medium heat. Drizzle with remaining 1 tbsp honey and add figs. Cook for 2-3 mins, until lightly caramelized. Serve scoops of semifreddo with warm figs.
