Banana Oatmeal Bread(Diabetic Recipe)
- 6 Tbsp. margarine, softened
- 1/3 c. brown sugar
- 2 eggs, slightly beaten
- 1 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1 1/4 c. very ripe mashed bananas
- 1/4 c. buttermilk
- 3/4 c. golden raisins
- 1 c. rolled oats (uncooked)
- 1/2 c. pecans or walnuts
- Cream together margarine and brown sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, soda and cinnamon.
- Add to creamed mixture alternately with bananas and milk.
- Add raisins, oatmeal and nuts.
- Spoon batter into an 8 x 5 x 3-inch loaf pan coated with cooking spray.
- Bake at 325u0b0 for 50 to 60 minutes or until wooden pick inserted in center comes out clean.
