Sticky Chilli Pork Ribs
- 1 bunch fresh cilantro, roots and stems finely chopped, leaves reserved
- 1 cup malt vinegar
- 4 cloves garlic, chopped
- 4 tsp sambal oelek (Indonesian ground chili paste)
- 4 lbs pork baby back ribs, cut into 4-rib sections
- 2 cans (20 oz each) plums in syrup, drained
- 1/3 cup packed brown sugar
- 1 piece (1 inch) ginger, peeled and finely chopped
- None None Mixed salad, to serve
- Pulse cilantro roots and stems, 1/4 cup of the vinegar, garlic and 2 tsp of the sambal oelek in food processor until almost smooth. Place ribs in a large shallow dish and coat with mixture. Cover and marinate for 1 hour.
- Meanwhile, combine plums, remaining 3/4 cup vinegar, sugar, ginger and remaining 2 tsp sambal oelek in a food processor. Process until smooth. Pour mixture into a medium saucepan. Bring to a boil on high heat. Reduce heat to medium and simmer for 10-15 mins, until thickened. Transfer to a bowl. Cool slightly then refrigerate until chilled.
- Brush half plum sauce over ribs. Marinate for 1 hour.
- Preheat the grill on medium-low heat. Grill ribs for 45 mins to 1 hour, covered, turning occasionally. Serve with remaining plum sauce and salad.
