Sticky Chilli Pork Ribs

  1. Pulse cilantro roots and stems, 1/4 cup of the vinegar, garlic and 2 tsp of the sambal oelek in food processor until almost smooth. Place ribs in a large shallow dish and coat with mixture. Cover and marinate for 1 hour.
  2. Meanwhile, combine plums, remaining 3/4 cup vinegar, sugar, ginger and remaining 2 tsp sambal oelek in a food processor. Process until smooth. Pour mixture into a medium saucepan. Bring to a boil on high heat. Reduce heat to medium and simmer for 10-15 mins, until thickened. Transfer to a bowl. Cool slightly then refrigerate until chilled.
  3. Brush half plum sauce over ribs. Marinate for 1 hour.
  4. Preheat the grill on medium-low heat. Grill ribs for 45 mins to 1 hour, covered, turning occasionally. Serve with remaining plum sauce and salad.
