Noodle Crunch
- 3 1/2 cups fried chow mein noodles
- 1/2 cup pumpkin seeds
- 1/3 cup sunflower seeds
- 1 None egg white
- 1 tbsp honey
- 2 tsp sesame oil
- 1/2 tsp ground cinnamon
- 1/3 cup flaked coconut
- 1/4 cup sesame seeds
- 1/2 cup dried apricots, chopped
- 1/2 cup dried banana chips, coarsely crushed
- Preheat the oven to 350u0b0F. Line a large baking pan with baking paper. Combine noodles, pumpkin seeds and sunflower seeds in a large bowl. Whisk egg white, honey, sesame oil and cinnamon in a small bowl. Add to noodle mixture; toss gently to coat evenly. Spread in prepared pan.
- Bake for 5-6 mins or until golden. Use a large metal spoon to stir mixture. Sprinkle with coconut and sesame seeds and stir. Bake for 5-7 mins or until toasted. Using a spoon, break up mixture roughly. Cool in pan on wire rack..
- Add apricots and banana chips to noodle mixture; stir to combine.
