Sausage, Homemade Tomato Sauce And Potato Wedges
- 150 g potatoes, scrubbed and cut into wedges
- 2 tsp oil
- 1 large chicken sausage
- 1 None onion, peeled and finely chopped
- 1 None beefsteak tomato, finely chopped
- 1 tbsp ketchup
- Pinch None dried oregano
- 1 tsp tomato puree
- None None curry powder, to serve
- None None fresh oregano sprigs, to garnish (optional)
- Preheat the oven to 400u0b0F. Place the potato wedges on a baking pan. Drizzle with 2 tsp of the oil and season with salt and freshly ground black pepper; toss to coat. Bake for 25-30 mins, turning occasionally.
- Meanwhile, cook the sausage according to the package directions.
- Heat the remaining 2 tsp oil in a small saucepan on medium heat. Add the onion, tomato and 5 tbsp water and bring to a boil. Add the ketchup, tomato paste and oregano. Season to taste with salt and freshly ground black pepper. Cook 2 mins longer. Spoon over the sausage. Serve with the potato wedges. Sprinkle with curry powder and garnish oregano sprigs (if using).
