Mini Lamb Sliders With Feta And Lemon Dressing
- 14 oz ground lamb
- 1 None medium egg
- 1 tsp ground cumin
- 2 cloves garlic, minced
- 1 tsp dried mint (or use oregano)
- 1 tsp olive oil, plus extra for cooking
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 pinch chili flakes
- 1 1/2 tbsp finely chopped preserved lemon rind
- None None spicy chutney, to serve
- 12 None small burger buns
- 1/2 head romaine lettuce, torn into bite-sized pieces
- 3.5 oz creamy style feta cheese
- Combine ground lamb, egg, cumin, 1/2 tsp salt, garlic, mint, olive oil and 1-2 tbsp water. Shape into 12 mini burger patties. Arrange on a tray and chill for 1-2 hours.
- To make the dressing, whisk together extra virgin olive oil, lemon juice, 1/4 tsp salt and chili flakes. Mix in preserved lemon.
- Heat extra olive oil in a large frying pan over medium heat. Cook patties until browned on both sides and cooked to your liking.
- Spread chutney over bottom burger buns then top with lettuce and patties. Spoon dressing over patties then top with feta cheese and top burger buns. Serve.
