Glazed Pork And Watercess Salad
- 1/3 cup honey
- 3 oz tamarind paste
- 2 1/2 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 2 lb pork fillets
- 3.5 oz watercress
- 1 None medium red onion, thinly sliced
- 2 None cucumbers, deseeded, thinly sliced
- 1 None yellow pepper, thinly sliced
- 1/2 cup roasted unsalted cashews
- None None salad, to serve
- Preheat broiler. Combine honey, tamarind paste, ginger and garlic. Coat pork with 1/3 of mixture in a medium bowl. Grill pork until browned all over and cooked to your liking. Cover and let rest for 10 mins. Slice thickly.
- Meanwhile, combine remaining ingredients with 1/2 the remaining honey mixture in a medium bowl. Drizzle pork with remaining honey mixture. Serve with salad.
