Mediterranean Meatball Sandwiches
- 1 1/2 lbs ground beef
- 1 1/2 cups fresh white breadcrumbs
- 1 large egg, lightly beaten
- 1 clove garlic, peeled and minced
- 1 tbsp fresh chopped basil
- None None Finely grated zest and juice of 1 lemon
- None None Cooking spray
- 4 None spring onions, cut into 1/2-inch lengths
- 1 tbsp olive oil
- 4 None flat breads, warmed
- None None Lettuce, shredded
- None None Cherry tomatoes, halved
- None None Lemon wedges, to serve
- None None Tzatziki, to serve
- Combine the beef, breadcrumbs, egg, garlic, basil, zest and juice in a bowl and mix thoroughly. Season with salt and freshly ground black pepper. With wet hands, shape mixture into 18 meatballs.
- Preheat the broiler to high. Line a baking sheet with foil and spray with cooking spray.
- Thread the spring onions and meatballs alternately onto four metal skewers. Season with pepper and brush with the olive oil. Place on prepared tray and cook under broiler for 10-15 mins turning occasionally, until cooked through.
- Serve the skewers on flat breads with shredded lettuce and halved cherry tomatoes. Serve with lemon wedges and tzatziki.
