Baked Chicken Macaroni & Cheese

  1. Preheat broiler to high.
  2. Melt butter in a large saucepan over low heat. Stir in flour and cook for 1 min. Remove from heat and whisk in milk until smooth. Return to heat and cook, stirring, over high heat until sauce boils and thickens. Reduce heat and simmer for 3 mins. Stir in half of both cheeses until melted and combined. Remove from heat and stir in macaroni, chicken, corn, red pepper and peas and season to taste.
  3. Pour into a large casserole dish (or 4 small ramekins). Sprinkle with remaining cheese. Place under broiler for 4-5 mins or until cheese is golden and melted.
