Beef Patties With Potatoes And Coleslaw
- 1/2 None red cabbage, finely shredded
- 1 None carrot, finely shredded
- 1/2 cup coarsely chopped parsley
- 1/4 cup lemon juice
- 2 tbsp mayonnaise
- 1 lb potatoes, peeled, cut into chunks
- 1 lb ground beef
- 1 small onion, grated
- 1/2 cup dried breadcrumbs
- 1 tbsp dried Italian herbs
- 1 clove garlic, crushed
- 1 tsp Worcestershire sauce
- 1 None egg, lightly beaten
- 1/4 cup olive oil
- Place potatoes in a microwave-safe bowl with a little water. Cover with plastic wrap. Microwave on high 6-7 mins, or until just tender. Rinse in cold water and drain well.
- Combine ground beef, onion, breadcrumbs, herbs, garlic, Worcestershire sauce and egg in a large bowl. Season to taste. Shape mixture into patties. Refrigerate.
- Heat half the oil in a large skillet on high heat. Cook potatoes 8-10 mins, turning, until golden and crisp. Drain on paper towels. Season to taste. Keep warm.
- Heat remaining oil in same pan on high heat. Cook beef patties 4-5 mins each side until cooked through.
- For the coleslaw, combine all ingredients in a large bowl. Season to taste. Serve beef patties with potatoes and coleslaw.
