Tropical Fruit Salad

  1. Place cardamom, ginger, lemon peel, juices and 1 cup water in medium skillet. Scrape vanilla seeds into pan, then add vanilla bean. Bring to a boil. Reduce heat to low; simmer, uncovered, without stirring, for 20 mins. Strain syrup into medium jug; discard spices and pod. Cool for 10 mins. Refrigerate, covered, until syrup is cold.
  2. Just before serving, place syrup and fruit in large bowl; toss gently to combine.
