Wasabi Fish With Soba Noodle Salad
- 6 oz dried soba noodles
- 1 cup fresh cilantro leaves, 1/2 coarsely chopped, remainder reserved
- 1/4 cup mirin
- 2 tbsp soy sauce
- 2 tsp fish sauce
- 2 tbsp vegetable or peanut oil
- 3 tsp wasabi paste
- 4 (5 oz) boneless firm white fish fillets
- 1 None medium carrot, peeled, cut into matchsticks
- 1 None small cucumber, seeded, cut into matchsticks
- 3 oz bean sprouts, rinsed
- Cook noodles in boiling, salted water for 4-5 mins, or until al dente. Drain and set aside.
- Whisk together mirin, soy sauce, fish sauce and 1 tbsp oil in a medium bowl. Transfer 1/2 the dressing to a large bowl and add wasabi and noodles. Toss to combine. Add chopped cilantro and fish to the other 1/2 of the dressing.
- Heat remaining oil in a large frying pan over medium-high heat. Cook fish for 3 mins per side, or until cooked to your liking.
- Add carrot, cucumber, bean sprouts and remaining cilantro leaves to noodle mixture and toss to combine. Arrange noodles on a serving plate and top with fish.
