Creamy Horseradish Chicken With Garlic Sautéed Spinach
- 1 tbsp olive oil
- 4 None chicken breast fillets
- 1 None green onion, thinly sliced
- 2 tbsp dry white wine
- 2/3 cup heavy cream
- 2 tbsp prepared horseradish
- 2 tsp lemon juice
- 1/2 tsp Dijon mustard
- 1 tsp fresh dill, finely chopped
- 1 1/2 tbsp butter
- 2 cloves garlic, minced
- 1 1/4 lb spinach, coarsely chopped
- In a large frying pan, heat 1/2 tbsp oil over medium heat. Cook chicken for 5-10 mins, or until browned and tender. Remove from pan and cover to keep warm.
- Add remaining oil to pan. Cook green onion, stirring, for 2 mins, or until soft. Add wine and bring to a boil. Reduce heat and simmer for 3 mins, or until liquid is reduced by 1/2. Add cream and bring back to a boil. Reduce heat and simmer for 2 mins, or until sauce is thickened slightly. Add horseradish, lemon juice, mustard and dill.
- Meanwhile, in a large saucepan, melt butter over medium heat. Cook garlic, stirring, for 2 mins. Reduce heat to low and cook spinach, covered, for 2 mins, or until wilted.
- Serve chicken and spinach drizzled with sauce.
