Lemon Thyme Chicken With Blue Cheese Polenta
- 4 None chicken breast fillets
- 2 tbsp fresh thyme leaves
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 1/2 tbsp butter
- 1 tbsp lemon juice
- 1/4 cup white wine
- 9 oz polenta
- 2.5 oz blue cheese, crumbled
- 1/4 cup walnuts, toasted
- None None steamed broccoli and lemon wedges, to serve
- In a shallow dish, combine chicken, thyme, 1 tbsp olive oil, lemon juice and garlic. Season to taste. Chill, covered, for 30 mins.
- Heat butter and remaining oil in a large frying pan over medium heat. Cook chicken for 5-6 mins per side, until browned all over and cooked through. Transfer to a plate, cover loosely with foil and let rest for 5 mins.
- Meanwhile, cook polenta according to package instructions. Add blue cheese and stir to combine. Season.
- Deglaze frying pan with wine. Simmer for 1 min, stirring.
- Arrange chicken and polenta on serving plates. Drizzle with pan sauce and sprinkle with walnuts. Serve with steamed broccoli and lemon wedges.
