Coffee And Almond Bars

  1. Preheat oven to 350u0b0F. Grease and line a 12x8 inch baking pan.
  2. Cream butter, sugar and vanilla extract until pale and creamy. Add egg and beat until combined. Fold in flour and raisins. Transfer to prepared pan and bake for 25 mins, until golden. Let cool for 5 min in pan then transfer to a wire rack to cool completely.
  3. Meanwhile, to make the icing, mix together powdered sugar and butter in a small bowl. Add coffee, a little at a time, stir until smooth. Spread icing over cooled cake and sprinkle with almonds. Cut into bars and serve.
