Chocolate Mud Cupcakes

  1. Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
  2. Gently melt butter and 1 oz chocolate over low heat. Whisk together eggs, yogurt, milk, sugar and vanilla until combined then whisk in chocolate-butter mixture. Sift flour, cocoa powder and baking powder over top and whisk until smooth. Distribute between paper liners and bake for 25 mins, or until a skewer inserted in the center comes out clean. Let cool on a wire rack.
  3. Meanwhile, gently heat remaining chocolate and cream over low heat, stirring until melted and glossy. Spread over cooled cupcakes and set aside for 30 mins to set. Serve.
