Onion And Potato Frittata

  1. Preheat oven to 425u0b0F. Grease an 8 inch shallow baking dish.
  2. Combine onion, butter and 1/4 tsp salt in a small, heavy-bottomed frying pan. Place over low heat, cover and cook for 10 mins. Remove lid and increase heat to medium-low. Cook for another 10 mins, stirring occasionally, until onion is soft. Set aside to cool.
  3. In a large mixing bowl, beat eggs and milk with flour and mashed garlic. Add onion, potatoes, cheese and greens. Mix gently with a spatula until well combined then spread out evenly in prepared dish. Sprinkle with Parmesan and bake for 30 mins.
  4. Serve warm or at room temperature.
