Onion And Potato Frittata
- 1 None large onion, finely chopped
- 2 tbsp butter
- 3 None large eggs
- 1 cup milk
- 1/3 cup self-rising flour
- 2 cloves garlic, mashed with 1/2 tsp salt
- 2 None potatoes, steamed, peeled, cubed
- 1/3 cup grated Cheddar cheese
- 7 oz fresh salad greens and herbs, finely chopped
- 1/2 tbsp grated Parmesan cheese
- Preheat oven to 425u0b0F. Grease an 8 inch shallow baking dish.
- Combine onion, butter and 1/4 tsp salt in a small, heavy-bottomed frying pan. Place over low heat, cover and cook for 10 mins. Remove lid and increase heat to medium-low. Cook for another 10 mins, stirring occasionally, until onion is soft. Set aside to cool.
- In a large mixing bowl, beat eggs and milk with flour and mashed garlic. Add onion, potatoes, cheese and greens. Mix gently with a spatula until well combined then spread out evenly in prepared dish. Sprinkle with Parmesan and bake for 30 mins.
- Serve warm or at room temperature.
